Lefsa Time
Here we are making lefsa. My son and grandson were making lefsa to give for Christmas presents. After cooking the potatoes, we cooled them and then riced them. Much better than mashing them. I purchased a big electric griddle that worked great. When my sons were little we had an old range that had a griddle in between the burners. My son doesn't remember the process. Of course I did it by myself then. If interested, let me know and I will put the recipe on the blog.
I made the required springerle and Swedish sunflower seed cookies. My three sons insist that I make these for Christmas every year. The springerle takes three days to make and then is supposed to set for two weeks. I was a little slow this year so they didn't get to age for the two weeks. It didn't seem to matter: the cookies disappeared quickly.
Lets talk about New Years Resolutions. I didn't make any.
I did mail Christmas letters this year. Three came back. I have no clue where these relatives moved to. Will have to ask some of their relatives. I think it is time for a family reunion. Families are so spread out nowadays that it is hard for everyone to coordinate vacations. Any thoughts or suggestions?
